1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn kernels, drained

1 can (10 oz) diced tomatoes with green chiles

1 cup cooked white rice (or quinoa for a healthier option)

1 small onion, diced

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

2 cups shredded cheddar cheese (or Mexican blend cheese)

1/4 cup fresh cilantro, chopped (for garnish)

1/2 cup sliced black olives (optional, for topping)

1 avocado, sliced (for serving)

1 cup sour cream (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: In a large mixing bowl, combine the cooked and shredded chicken with black beans, corn, diced tomatoes (with juices), cooked rice, onion, garlic, cumin, chili powder, smoked paprika, salt, and pepper. Mix well until all ingredients are evenly incorporated.

      Layer the Casserole: Grease a 9x13-inch casserole dish. Spread half of the chicken mixture evenly across the bottom of the dish. Then, add a layer of 1 cup of shredded cheese over the chicken mixture. Repeat with the remaining chicken mixture, then top with the remaining cheese.

        Bake: Cover the casserole with aluminum foil (to prevent burning) and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
