Ingredients

2 cups shredded Monterey Jack cheese

1 cup shredded sharp cheddar cheese

1 cup cream cheese, softened

1 can (10 oz) diced tomatoes with green chilies (like Ro-Tel), drained

1/2 cup chopped fresh cilantro

1/4 cup diced jalapeños (adjust for spice tolerance)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon chili powder (optional)

Salt and pepper to taste

1 tablespoon olive oil

Tortilla chips or fresh veggies for serving

Instructions

Prep the Ingredients: Start by draining the canned tomatoes and jalapeños. Chop the cilantro and set it aside.

Heat the Base: In a medium saucepan, heat the olive oil over medium heat. Add the cream cheese and let it soften and melt, stirring constantly to prevent sticking.

Combine the Cheeses: Once the cream cheese is melted, gradually stir in the shredded Monterey Jack and cheddar cheese. Continue to stir until all the cheese is melted and the mixture is smooth.

Add Flavors: Stir in the diced tomatoes, jalapeños, garlic powder, onion powder, and chili powder (if using). Mix until everything is well combined. Season with salt and pepper to taste.

Mix in Freshness: Remove the saucepan from heat and fold in the chopped cilantro for a fresh finish.

Serve: Transfer the cheese dip to a serving bowl and enjoy warm. Serve with tortilla chips or fresh veggies for dipping.
