Mexican Street Corn Nachos

2 cups tortilla chips

2 cups corn kernels (fresh or frozen)

1 tablespoon olive oil

2 tablespoons mayonnaise

1 tablespoon sour cream

1 teaspoon chili powder

1 teaspoon lime juice

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 cup crumbled queso fresco (or feta cheese)

1/4 cup chopped fresh cilantro

1/4 cup diced red onion

1 jalapeño, sliced (optional for spice)

Lime wedges, for serving

Instructions
 

Prepare the Corn: In a skillet over medium-high heat, add the olive oil and corn kernels. Sauté for about 5-7 minutes, or until the corn is slightly charred and tender. Remove from heat and let cool slightly.

    Make the Sauce: In a small bowl, mix together the mayonnaise, sour cream, chili powder, lime juice, salt, and black pepper until well combined.

      Assemble the Nachos: On a large baking sheet or an oven-safe platter, layer half of the tortilla chips evenly. Top with half of the sautéed corn, half of the sauce mixture, and half of the crumbled queso fresco. Repeat this layering with the remaining ingredients.
