Instructions

Prepare the Bread Cups: Preheat your oven to 350°F (175°C). Using a rolling pin, flatten each slice of bread to about 1/4 inch thick. Grease a muffin tin with cooking spray or butter. Gently press each bread slice into the muffin tin to form cups, ensuring the sides are high enough to hold the filling. Bake for about 10-15 minutes until golden and slightly crispy. Remove from the oven and let cool.

Make the Apple Filling: In a medium-sized skillet, melt the butter over medium heat. Add the diced apples, brown sugar, ground cinnamon, nutmeg, lemon juice, and flour. Stir and cook for about 5-7 minutes until the apples are tender and the mixture thickens slightly. Remove from heat and set aside to cool.

Prepare the French Toast Mixture: In a large mixing bowl, whisk together the eggs, whole milk, vanilla extract, ground cinnamon, sugar, and a pinch of salt until well combined.

Assemble the Cups: Once the bread cups have cooled, spoon the apple filling into each cup, filling them generously. Then, carefully pour the egg mixture over the top of each cup until just full (be cautious not to overfill).

Bake the Cups: Place the muffin tin back into the preheated oven and bake for an additional 15-20 minutes, or until the tops are set and slightly golden.

Serve: Allow the Mini Apple Pie French Toast Cups to cool for a few minutes. Carefully remove them from the muffin tin. Serve warm, topped with whipped cream or a scoop of vanilla ice cream, and dust with extra cinnamon and powdered sugar. Enjoy the delicious fusion of sweet apple pie and classic French toast!
