Mini BBQ Chicken Pizza Tarts

1 cup cooked chicken, shredded

1/2 cup BBQ sauce (your favorite brand)

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/4 cup cooked bacon, crumbled

1/2 cup bell peppers, diced

1 package puff pastry (2 sheets)

1 egg, beaten (for egg wash)

Fresh cilantro or parsley, for garnish

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Chicken Mixture: In a mixing bowl, combine the shredded chicken and BBQ sauce. Mix until the chicken is well coated. Season with salt and pepper if desired.

      Roll out the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheets to smooth them out. Cut each sheet into 3-inch squares. You should get about 12 squares from 2 sheets.

        Shape the Tarts: Place the square puff pastry pieces onto the prepared baking sheet. Use a knife to gently score a border about 1/2 inch from the edges of each square—this will help form a puffed crust while baking.

          Add the Toppings: Inside the border of each pastry square, add a spoonful of the BBQ chicken mixture. Top generously with shredded mozzarella cheese, followed by a sprinkle of sliced red onion, diced bell peppers, and crumbled bacon.

            Brush with Egg Wash: Using a pastry brush, lightly brush the edges of the puff pastry with the beaten egg to give it a golden color while baking.

              Bake: Place the baking sheet in the oven and bake for 15-20 minutes or until the pastry is golden brown and puffed, and the cheese is melted and bubbly.
