Mini Chicken Fajita Crescent Rolls

1 pound cooked chicken breast, shredded

1 tablespoon olive oil

1 small red bell pepper, thinly sliced

1 small green bell pepper, thinly sliced

1 small onion, thinly sliced

1 tablespoon taco seasoning

1 package (8 oz) refrigerated crescent roll dough

1 cup shredded cheddar cheese

Fresh cilantro, for garnish

Sour cream or guacamole, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced red and green bell peppers and onion. Sauté for about 5-7 minutes, or until the vegetables are softened and slightly caramelized.

      Add Chicken and Seasoning: Stir in the shredded chicken and taco seasoning, mixing until everything is well combined. Cook for an additional 2-3 minutes to heat the chicken through and allow the flavors to meld. Remove from heat and let it cool slightly.

        Prepare the Crescent Rolls: Open the can of crescent roll dough and unroll it on a clean surface. Pinch the perforations together to create rectangles instead of triangles.

          Assemble the Rolls: Spoon about 2 tablespoons of the chicken and vegetable mixture onto the wide end of each crescent roll triangle. Top each with a sprinkle of shredded cheddar cheese.

            Roll and Bake: Starting from the wide end, roll each crescent dough tightly towards the point. Place the rolls seam-side down on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes, or until golden brown.

              Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro and serve warm with sour cream or guacamole on the side!
