Mini Chicken Fajita Wonton Cups

1 package (12 oz) wonton wrappers

2 cups cooked chicken, shredded or diced

1 bell pepper (any color), thinly sliced

1 small onion, thinly sliced

2 tablespoons olive oil

1 tablespoon taco seasoning

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup fresh cilantro, chopped

1/2 cup sour cream (for serving)

Optional toppings: diced tomatoes, sliced jalapeños, avocado, lime wedges

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Wonton Cups: Lightly grease a muffin tin. Gently press each wonton wrapper into the muffin cups, creating a cup shape. You can fold the edges slightly to make them fit better.

      Cook the Fajita Filling: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and bell peppers, sautéing for about 3-4 minutes until they start to soften.

        Add the Chicken and Seasoning: Stir in the cooked chicken and taco seasoning. Cook for an additional 2-3 minutes until everything is heated through and well combined.

          Fill the Wonton Cups: Spoon the chicken fajita mixture evenly into each wonton cup. Top each one with a sprinkle of shredded cheese.

            Bake: Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the edges of the wonton wrappers are golden and crispy, and the cheese is melted.

              Garnish and Serve: Remove the wonton cups from the oven and let cool for a couple of minutes. Garnish with fresh cilantro. Serve with sour cream and any optional toppings you desire.
