Ingredients
  

6 large eggs

1/2 cup milk (or unsweetened almond milk)

1/2 cup shredded cheese (cheddar or your choice)

1/4 cup diced bell peppers (red and green)

1/4 cup diced cooked bacon or diced smoked turkey

1/4 cup fresh spinach, chopped

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

Cooking spray or olive oil for greasing

Instructions
 

Preheat your oven to 350°F (175°C). Prepare a muffin tin by greasing it with cooking spray or a brush of olive oil to ensure easy release of the egg bites once baked.

    In a mixing bowl, whisk together the eggs and milk until thoroughly combined. This mixture will provide a fluffy texture to your egg bites.

      Stir in the shredded cheese, diced bell peppers, cooked bacon (or turkey), chopped spinach, garlic powder, onion powder, and season with salt and pepper to taste. Mix until all ingredients are evenly distributed.

        Carefully pour the egg mixture into the prepared muffin tin, filling each cup about 2/3 full to allow for rising.

          Bake in the preheated oven for 18-20 minutes, or until the egg bites are set and lightly golden on top. You can check for readiness by inserting a toothpick; it should come out clean.

            Once baked, allow the mini egg bites to cool for a few minutes before running a knife around the edges to loosen them. Gently remove the bites from the muffin tin.

              Serve warm or allow to cool completely before storing in an airtight container in the refrigerator. They can be reheated in the microwave for a quick breakfast or snack!
