8 large eggs

1/4 cup milk (or dairy-free alternative)

1/2 cup shredded cheese (cheddar, mozzarella, or your choice)

1/2 cup diced bell peppers (red, green, and yellow for color)

1/4 cup finely chopped spinach (or any leafy green)

1/4 cup cooked and crumbled breakfast sausage or bacon (optional)

1/2 tsp garlic powder

Salt and pepper, to taste

Olive oil or cooking spray (for greasing)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a muffin tin by greasing each cup with olive oil or cooking spray to prevent sticking.

    Beat the Eggs: In a large mixing bowl, crack the eggs and add the milk. Whisk together until well combined and frothy.

      Add Ingredients: Stir in the shredded cheese, diced bell peppers, chopped spinach, and breakfast meat (if using). Sprinkle in the garlic powder, then season with salt and pepper to taste. Mix everything until evenly distributed.

        Pour and Fill: Carefully pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full to allow for rising.

          Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg bites are set and slightly golden on top. You can insert a toothpick into the center to check for doneness; it should come out clean.

            Cool and Pop Out: Once baked, remove the muffin tin from the oven and let it cool for about 5 minutes. Gently run a knife around the edges of each egg bite and carefully pop them out.

              Store or Serve: Allow them to cool completely if you are storing them. These Mini Egg Bites can be placed in an airtight container in the refrigerator for up to 5 days or frozen for up to a month. Reheat in the microwave when ready to enjoy!
