1 cup almond flour

1/2 cup oats (gluten-free if desired)

1/4 cup coconut oil, melted

3 tablespoons maple syrup

1/4 teaspoon salt

1 cup Greek yogurt (or dairy-free yogurt)

2 tablespoons honey or agave syrup

1 teaspoon vanilla extract

Zest of 1 lemon

Instructions
 

Make the crust: In a medium bowl, combine almond flour, oats, melted coconut oil, maple syrup, and salt. Stir until the mixture is well combined and resembles a damp crumbly texture.

    Form the tarts: Press the mixture into the bottom and up the sides of a mini muffin tin to form tart shells. Use your fingers or the back of a spoon to create a nice shape. Place the muffin tin in the refrigerator for at least 30 minutes to set.

      Prepare the filling: In a mixing bowl, whisk together the Greek yogurt, honey (or agave syrup), vanilla extract, and lemon zest until smooth and creamy.
