Mini Taco Quiche Breakfast Bites

Ingredients
  

6 large eggs

1 cup milk

1 cup shredded cheddar cheese

1 cup cooked ground beef or turkey

1 cup diced bell peppers (red and green)

½ cup diced onion

½ cup canned black beans, rinsed and drained

½ cup salsa

1 teaspoon taco seasoning

Salt and pepper to taste

1 package wonton wrappers

Fresh cilantro, for garnish (optional)

Sour cream, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Muffin Tin: Lightly grease a standard muffin tin with cooking spray.

      Create Wonton Cups: Gently press wonton wrappers into each muffin cup, forming a small cup shape. Bake in the preheated oven for about 5 minutes until they start to become slightly golden. Remove from oven and set aside.

        Cook the Filling: In a skillet, cook the diced onion and bell peppers over medium heat until they soften, about 3-4 minutes. Add the cooked ground beef or turkey, black beans, salsa, taco seasoning, salt, and pepper. Stir to combine and cook for an additional 2 minutes. Remove from heat.

          Whisk the Eggs: In a large bowl, whisk together the eggs and milk until well combined and frothy.

            Assemble the Quiches: Evenly distribute the meat and vegetable mixture into the baked wonton cups. Pour the egg mixture over the top of each cup, leaving a little room at the top as the eggs will puff up during baking. Then sprinkle with shredded cheddar cheese.

              Bake: Place the muffin tin back in the oven and bake for 18-20 minutes, or until the egg is fully set and the tops are lightly golden.

                Cool and Serve: Allow the Mini Taco Quiche Breakfast Bites to cool for a couple of minutes in the pan before carefully removing them. Garnish with fresh cilantro, if desired, and serve with a dollop of sour cream on the side.
