Mini Taco Stuffed Avocados

2 ripe avocados

1 cup cooked ground beef (or ground turkey)

1/2 cup black beans, rinsed and drained

1/2 cup corn (fresh or frozen)

1/2 cup diced tomatoes

1/4 cup finely chopped red onion

1/4 cup shredded cheese (cheddar or Mexican blend)

1/4 cup sour cream or Greek yogurt

2 tablespoons taco seasoning (or to taste)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Salt and pepper to taste

Instructions
 

Prepare the Avocados: Slice the avocados in half and remove the pit. Gently scoop out a small portion of the flesh from each half to create a larger well for the filling. Reserve the scooped avocado for later use.

    Cook the Beef: In a skillet over medium heat, add the cooked ground beef (or turkey) and sprinkle the taco seasoning over it. Stir until well combined and heated through. If you like it saucy, add a splash of water.

      Mix the Filling: In a medium bowl, combine the seasoned meat with black beans, corn, diced tomatoes, red onion, and half of the cheese. Toss gently to combine. Season with salt and pepper to taste.

        Stuff the Avocados: Spoon the taco filling generously into each avocado half, pressing down slightly to pack it in. Use additional reserved avocado flesh if needed to fill the gaps.

          Top and Serve: Sprinkle the remaining cheese over the stuffed avocados and add a dollop of sour cream or Greek yogurt on top. Finish with freshly chopped cilantro for a burst of flavor.

            Garnish: Serve immediately with lime wedges on the side for squeezing over the stuffed avocados.
