8 oz egg noodles or rice noodles

1 lb ground beef

2 tablespoons vegetable oil

4 cloves garlic, minced

1 inch ginger, grated

1 cup green onions, chopped (divided)

1 bell pepper, sliced (red or green)

1/2 cup soy sauce

1/4 cup hoisin sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

1 teaspoon crushed red pepper flakes (adjust for spiciness)

Salt and pepper to taste

Sesame seeds for garnish

Instructions
 

Cook the Noodles: In a large pot of boiling water, cook the egg or rice noodles according to package instructions until al dente. Drain and set aside.

    Sauté Aromatics: In a large skillet or wok, heat vegetable oil over medium-high heat. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.

      Brown the Beef: Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

        Add Vegetables: Stir in the sliced bell pepper and half of the chopped green onions (reserve the other half for garnish). Cook for another 2-3 minutes until the vegetables soften.

          Make the Sauce: In a small bowl, mix together the soy sauce, hoisin sauce, brown sugar, sesame oil, and crushed red pepper flakes. Pour this sauce over the beef and vegetable mixture, stirring well to combine.

            Combine Noodles: Add the cooked noodles to the skillet. Toss everything together gently over medium heat for about 2-3 minutes, ensuring noodles are well coated with the sauce. Season with salt and pepper to taste.
