Ingredients

8 oz spaghetti

2 boneless, skinless chicken breasts

1 cup Monterey Jack cheese, shredded

1 cup cooked bacon, crumbled

1 cup barbecue sauce (your favorite brand)

1 bell pepper (red, green, or yellow), diced

1 small onion, chopped

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Drain and set aside.

Prepare the Chicken: While the pasta cooks, season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Add the chicken and cook for about 6-7 minutes per side until fully cooked and browned. Remove from the skillet and let it rest for 5 minutes before slicing it into strips.

Sauté Vegetables: In the same skillet, add the chopped onion and bell pepper. Sauté for about 3-4 minutes until the vegetables are tender. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Combine Ingredients: In a large mixing bowl, combine the cooked spaghetti, sautéed vegetables, sliced chicken, crumbled bacon, and barbecue sauce. Toss everything together until well combined.

Add Cheese: Transfer the mixture to a greased baking dish. Sprinkle the shredded Monterey Jack cheese evenly over the top.

Bake: Preheat your oven to 350°F (175°C). Bake the spaghetti for about 20-25 minutes, or until the cheese is melted and bubbly.

Serve: Remove from the oven, garnish with fresh parsley, and serve warm. Enjoy your Monterey Chicken Spaghetti with a side salad for a complete meal!
