1 cup all-purpose flour

1 cup whole wheat flour

1 cup rolled oats

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup light brown sugar, packed

1/2 cup granulated sugar

1/2 cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

1 cup grated carrots (about 2 medium carrots)

1/2 cup chopped apple (about 1 small apple)

1/2 cup crushed pineapple, drained

1/2 cup walnuts or pecans, chopped (optional)

1/4 cup raisins or shredded coconut (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with cooking spray.

    Mix Dry Ingredients: In a large bowl, whisk together both flours, rolled oats, baking powder, baking soda, cinnamon, salt, and both sugars until well combined.

      Combine Wet Ingredients: In another bowl, whisk together the vegetable oil, eggs, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Avoid overmixing to keep your muffins fluffy.

          Add Fruits and Nuts: Fold in the grated carrots, chopped apple, crushed pineapple, and nuts (if using). Add raisins or shredded coconut if desired. Stir until evenly distributed.

            Fill Muffin Tin: Using a scoop or spoon, evenly distribute the batter among the muffin cups, filling them about 3/4 full.

              Bake: Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Cool: Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
