Ingredients
  

1 lb beef chuck, cut into 1-inch cubes

2 tbsp olive oil

1 medium onion, chopped

3 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, chopped

1 medium potato, diced

1 cup green beans, trimmed and cut into bite-sized pieces

1 can (14.5 oz) diced tomatoes (with juice)

4 cups beef broth

2 cups water

1 bay leaf

1 tsp dried thyme

1 tsp dried basil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef cubes and brown them on all sides, about 5-7 minutes. Remove the beef and set aside.

    In the same pot, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.

      Return the browned beef to the pot. Add the carrots, celery, potato, and green beans. Stir to combine.

        Pour in the diced tomatoes with their juice, beef broth, and water. Stir in the bay leaf, thyme, basil, salt, and pepper.

          Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through. Stir occasionally.

            Remove the bay leaf before serving. Taste and adjust seasoning if necessary.

              Serve hot, garnished with chopped fresh parsley.
