Ingredients
  

1 bag (12 oz) tortilla chips

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned)

1 jalapeño, sliced (optional)

1 avocado, diced

½ cup sour cream or Greek yogurt

1/2 cup salsa

1/4 cup fresh cilantro, chopped

Zest of 1 lime

Juice of 1 lime

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Base: Spread the tortilla chips evenly on a large baking sheet or oven-safe dish.

      Layer the Goods: Evenly distribute the black beans, corn, diced tomatoes, and jalapeño slices over the tortilla chips.

        Add the Cheese: Sprinkle both the cheddar and Monterey Jack cheese generously over the top.

          Bake: Place the baking sheet in the oven and bake for approximately 10-15 minutes, or until the cheese is melted and bubbly.

            Prepare the Toppings: While nachos are baking, combine diced avocado, lime zest, lime juice, salt, and pepper in a bowl. This will create a zesty avocado topping.

              Serve: Once the nachos are out of the oven, remove them carefully from the sheet. Top with the zesty avocado mixture, sour cream, salsa, and fresh cilantro.
