1 cup pitted dates

1 cup raw walnuts

1/2 cup rolled oats

1/4 cup unsweetened cocoa powder

1/4 cup protein powder (vanilla or chocolate)

2 tbsp almond butter (or any nut butter)

1 tsp vanilla extract

1/4 tsp sea salt

1/4 cup dark chocolate chips (optional)

2 tbsp shredded coconut (for rolling, optional)

Instructions
 

Soak Dates: If your dates are not soft, soak them in warm water for about 10 minutes. Once they are soft, drain and pat dry.

    Blend the Base: In a food processor, combine the pitted dates, walnuts, rolled oats, cocoa powder, protein powder, almond butter, vanilla extract, and sea salt. Pulse until the mixture is combined and sticky. You may need to scrape down the sides of the processor occasionally.

      Add Chocolate Chips: If you want chocolate chips, fold them in with a spatula or pulse gently just until blended.

        Form the Bites: Using your hands, take small portions of the mixture and roll them into 1-inch balls. If you prefer a rolled coating, you can roll the balls in shredded coconut for added texture.

          Chill: Place your brownie bites on a baking sheet lined with parchment paper and refrigerate for about 30 minutes to set.

            Store: Once chilled, store the protein bites in an airtight container in the fridge for up to a week (or freeze for longer storage).
