Ingredients

1 cup dried figs, chopped

1 cup rolled oats

1/2 cup almond butter (or any nut/seed butter of your choice)

1/4 cup honey or maple syrup

1/2 cup chopped nuts (walnuts, almonds, or pecans)

1/4 cup chia seeds

1 tsp vanilla extract

1/2 tsp cinnamon

Pinch of salt

Optional: 1/4 cup dark chocolate chips or cacao nibs

Instructions

Prepare the Mixture: In a large mixing bowl, combine the chopped figs, rolled oats, almond butter, honey or maple syrup, and vanilla extract. Use a spatula or your hands to mix until all ingredients are well incorporated.

Add Texture: Stir in the chopped nuts, chia seeds, cinnamon, and salt until evenly distributed. If you’re using chocolate chips or cacao nibs, fold them in at this stage for added sweetness and flavor.

Form the Bites: With clean hands, take small portions of the mixture (about 1 tablespoon each) and roll them into bite-sized balls. If the mixture seems too sticky, wet your hands slightly to help with rolling.

Chill: Place the rolled bites onto a baking sheet lined with parchment paper. Once all the mixture is rolled, refrigerate the energy bites for at least 30 minutes to firm up.

Store: After chilling, transfer the energy bites to an airtight container. They can be stored in the refrigerator for up to one week or in the freezer for longer shelf life.
