1 lb fresh figs, stems removed and chopped

1 cup granulated sugar

1/4 cup fresh lemon juice

1 teaspoon vanilla extract

1/4 teaspoon cinnamon (optional)

1/2 cup water

Prepare the Figs: In a medium bowl, mash the chopped figs with a fork or potato masher until they reach a chunky consistency. Leave some larger pieces for texture.

    Combine Ingredients: In a saucepan, combine the mashed figs, sugar, lemon juice, vanilla extract, cinnamon (if using), water, and a pinch of salt. Mix well to combine.

      Simmer: Place the saucepan over medium heat and bring the mixture to a gentle simmer. Stir frequently to ensure the sugar dissolves completely and the figs begin to break down further. This should take about 10-15 minutes.
