2 cups Fruity Pebbles cereal

1/2 cup unsalted butter, melted

1 cup cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1/4 cup Fruity Pebbles cereal for topping

Optional: Whipped cream for garnishing

Prepare the crust: In a mixing bowl, combine the Fruity Pebbles cereal and melted butter. Mix until the cereal is well coated. Press this mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Chill in the refrigerator while you prepare the filling.

    Make the cheesecake filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.

      Whip the cream: In a separate bowl, whip the heavy cream on high speed until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated. Be careful not to deflate the whipped cream.

        Combine and set: Fold in 1/4 cup of Fruity Pebbles into the cheesecake mixture for added texture and flavor. Pour the cheesecake filling over the prepared crust, smoothing the top with a spatula.

          Chill: Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or until set. For the best results, overnight chilling is recommended.

            Garnish and serve: Once set, remove the cheesecake from the springform pan. Top with more Fruity Pebbles and, if desired, dollops of whipped cream. Slice and serve chilled.
