For the Crust:

24 Oreo cookies, finely crushed

1/4 cup unsalted butter, melted

For the Cheesecake Filling:

16 oz (2 packages) cream cheese, softened

1/2 cup granulated sugar

1 tsp vanilla extract

2 cups heavy whipping cream

10 Oreo cookies, roughly chopped

For Topping:

6-8 mini Oreo cookies (optional)

Whipped cream (optional)

Prepare the Pan: Line an 8x8 inch baking pan with parchment paper, leaving some overhang to help lift the bars out later. Lightly spray with non-stick cooking spray.

    Make the Crust: In a medium mixing bowl, combine the finely crushed Oreo cookies with melted butter. Mix until all the crumbs are evenly moistened. Press the mixture firmly into the bottom of the prepared pan to form an even layer. Chill in the refrigerator for about 10 minutes while you prepare the filling.

      Prepare the Cheesecake Filling: In a large bowl, use an electric mixer to beat the softened cream cheese until smooth and creamy. Gradually add the granulated sugar and vanilla extract, mixing until well combined.

        Whip the Cream: In another bowl, using clean beaters, whip the heavy cream until stiff peaks form. This should take about 3-5 minutes.

          Fold Together: Gently fold the whipped cream into the cream cheese mixture in three batches. Be careful not to deflate the whipped cream; you want to keep it light and fluffy. Once combined, fold in the roughly chopped Oreo cookies.

            Assemble the Bars: Spread the cheesecake filling over the chilled crust evenly. Smooth out the top with a spatula.

              Chill: Cover the pan with plastic wrap or foil and refrigerate for at least 4 hours, or overnight for best results, until the cheesecake is firm.
