For the Crust:

24 Oreo cookies, crushed

5 tablespoons unsalted butter, melted

For the Cheesecake Filling:

16 oz (2 packages) cream cheese, softened

½ cup granulated sugar

1 teaspoon vanilla extract

1 tablespoon instant coffee granules (adjust for stronger coffee flavor)

2 cups whipped cream (store-bought or homemade)

¼ cup unsweetened cocoa powder

½ cup mini chocolate chips (optional)

For the Topping:

5 tablespoons chocolate syrup

5 tablespoons coffee (cooled)

Additional crushed Oreos for garnish

Instructions
 

Prepare the Crust:

    - In a medium bowl, mix the crushed Oreo cookies with melted butter until fully combined and crumbly.

      - Press the mixture evenly into the bottom of an 8x8 inch (or equivalent) square pan to create a firm crust. Use the back of a measuring cup to ensure it’s compact. Place in the refrigerator to set while you prepare the filling.

        Make the Cheesecake Filling:

          - In a large mixing bowl, beat the softened cream cheese until smooth and creamy using an electric mixer.

            - Add the granulated sugar, vanilla extract, and instant coffee granules. Mix until well combined and fluffy.

              - Gently fold in the whipped cream until the mixture is smooth and well combined. Be careful not to deflate the whipped cream too much.

                - Sift the cocoa powder into the mixture to avoid clumps, and fold gently. If using, fold in mini chocolate chips for extra texture and flavor.

                  Assemble the Cheesecake Bars:

                    - Pour the cheesecake filling over the prepared crust, spreading it evenly with a spatula.

                      - Use a plastic wrap or parchment paper to cover the pan lightly and chill in the refrigerator for at least 4 hours, preferably overnight, until set.

                        Prepare the Topping:

                          - In a small bowl, combine the chocolate syrup and cooled coffee until smooth.

                            - After chilling, remove the cheesecake from the fridge and drizzle the chocolate-coffee mixture over the top.
