Ingredients

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

⅓ cup granulated sugar

For the filling:

16 oz cream cheese, softened

¾ cup creamy peanut butter

¾ cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

For the topping:

½ cup chocolate chips

2 tablespoons peanut butter (for drizzling)

Instructions

Make the crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture resembles wet sand. Press the mixture firmly into the bottom of an 8x8-inch square pan to form an even layer. Chill in the refrigerator for 30 minutes.

Prepare the filling: In a large bowl, beat the softened cream cheese and creamy peanut butter together until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until well combined.

Whip the cream: In a separate bowl, whip the heavy cream to stiff peaks. Gently fold the whipped cream into the peanut butter mixture using a spatula. Be careful not to deflate the whipped cream too much.

Assemble the bars: Once the crust has chilled, pour the peanut butter cheesecake filling over the chilled crust, spreading it evenly. Smooth the top with a spatula. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

Prepare the topping: In a microwave-safe bowl, combine chocolate chips and 2 tablespoons of peanut butter. Microwave in 30-second intervals, stirring between each, until smooth and combined. Drizzle the chocolate-peanut butter mixture over the chilled cheesecake layer.

Slice and serve: Once the bars have set, remove them from the pan and slice into squares. Serve cold and enjoy the creamy, rich flavors of these no-bake cheesecake bars!
