For the crust:

2 cups crushed graham crackers

1/2 cup granulated sugar

1/2 cup unsalted butter, melted

For the cream cheese layer:

8 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup whipped topping (Cool Whip)

For the strawberry layer:

2 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar

1 tablespoon lemon juice

1 cup strawberry pie filling (optional, for extra flavor)

Instructions
 

Prepare the Crust:

    - In a mixing bowl, combine the crushed graham crackers, granulated sugar, and melted butter. Mix until the ingredients are well combined and resemble wet sand.

      - Press the mixture firmly into the bottom of a 9x13 inch baking dish to form an even crust. Place in the refrigerator to chill while you prepare the other layers.

        Make the Cream Cheese Layer:

          - In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

            - Gradually add the powdered sugar and vanilla extract, mixing well until fully incorporated.

              - Fold in the whipped topping gently until the mixture is light and fluffy.

                Assemble the Cake:

                  - Take the crust out of the refrigerator, and spread the cream cheese mixture evenly over the crust, smoothing it out with a spatula.

                    - In another bowl, toss the fresh strawberry slices with the granulated sugar and lemon juice. Let it sit for about 10 minutes to allow the strawberries to release their juices.

                      - If using, add in the strawberry pie filling and gently mix to combine. Evenly distribute the strawberry mixture over the cream cheese layer.

                        Chill:

                          - Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight if possible, to allow the flavors to meld and the cake to set.

                            Serve:
