For the Base:

1 ½ cups rolled oats

½ cup almond flour (or any nut flour)

¼ cup honey or maple syrup

¼ cup coconut oil, melted

¼ teaspoon salt

For the Filling:

2 cups Greek yogurt (plain or vanilla)

1 cup fresh strawberries, chopped (plus extra for garnish)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

For the Top Layer:

½ cup granola (store-bought or homemade)

2 tablespoons shredded coconut (optional)

A drizzle of honey for finishing (optional)

Instructions
 

Prepare the Base:

    - In a medium mixing bowl, combine the rolled oats, almond flour, honey (or maple syrup), melted coconut oil, and salt. Stir until well combined and all the dry ingredients are coated with wet ingredients.

      Shape the Base:

        - Line an 8x8 inch (or similar size) baking dish with parchment paper, leaving some overhang for easy removal. Press the oat mixture evenly into the bottom of the dish to form a solid layer. Use a spatula or your hands to compact it well. Place it in the fridge while you prepare the filling.

          Make the Strawberry Yogurt Filling:

            - In a mixing bowl, combine the Greek yogurt, chopped strawberries, honey (or maple syrup), and vanilla extract. Stir gently until the strawberries are evenly distributed throughout the yogurt.

              Assemble the Bars:

                - Remove the base from the fridge and carefully spread the strawberry yogurt mixture over the oat base, smoothing it out with a spatula for an even layer.

                  Top with Crunch:

                    - Sprinkle granola and shredded coconut evenly on top of the yogurt layer. Gently press it down into the yogurt to help it adhere.

                      Chill:
