1 medium zucchini, grated (about 1 cup)

1 ½ cups rolled oats

½ cup almond butter (or nut butter of choice)

¼ cup honey or maple syrup

½ teaspoon vanilla extract

½ teaspoon cinnamon

¼ teaspoon salt

½ cup dark chocolate chips (or dried fruits for a healthier option)

¼ cup chopped nuts (such as almonds or walnuts, optional)

Instructions
 

Prepare the Zucchini: Grate the zucchini using a box grater. Once grated, place the zucchini in a clean kitchen towel and squeeze out excess moisture. This step is crucial for preventing sogginess in the bars.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, cinnamon, and salt. Stir until well mixed. If using chopped nuts, add them to the bowl.

      Combine Wet Ingredients: In a separate bowl, mix the almond butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well blended.

        Combine Mixtures: Add the grated zucchini to the wet ingredients and stir until the zucchini is evenly coated. Then, pour the wet mixture into the bowl containing the dry ingredients. Mix everything together until fully combined.

          Add Chocolate Chips: Gently fold in the dark chocolate chips (or dried fruits) into the mixture.

            Press Into Pan: Line an 8x8 inch baking dish with parchment paper for easy removal. Transfer the mixture into the prepared dish, and press it down firmly with the back of a spatula or your hands to create an even layer.

              Chill: Place the dish in the refrigerator for at least 1 hour to allow the bars to set properly.
