Oatmeal Breakfast Cookies

1/2 cup almond flour (or all-purpose flour)

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/3 cup coconut oil, melted (or unsalted butter)

1/3 cup honey or maple syrup

1 large egg

1 teaspoon vanilla extract

1/2 cup mashed ripe bananas (about 1 medium banana)

1/2 cup chocolate chips (dark or semi-sweet)

1/4 cup chopped nuts (walnuts, pecans, or almonds) – optional

1/4 cup dried fruit (raisins, cranberries, or cherries) – optional

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, baking powder, baking soda, salt, and cinnamon. Stir well to ensure even distribution.

      Combine Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), egg, and vanilla extract until smooth. Then, mix in the mashed banana until fully incorporated.

        Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Stir until just combined. Be careful not to overmix. Fold in the chocolate chips, optional nuts, and dried fruit, if using.

          Scoop the Batter: Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

            Bake the Cookies: Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown. The cookies should look a little soft in the center.

              Cool and Enjoy: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy them warm or store them in an airtight container once cooled.
