4 ripe bananas, sliced

1 cup granulated sugar

1/3 cup all-purpose flour

1/4 teaspoon salt

3 cups whole milk

4 large egg yolks, beaten

1 tablespoon vanilla extract

1 cup heavy cream, whipped (for topping)

1 package (12 ounces) vanilla wafers

Extra vanilla wafers for garnish (optional)

Prepare the Pudding Base: In a medium saucepan, whisk together the sugar, flour, and salt. Gradually whisk in the milk over medium heat until the mixture is smooth.

    Thicken the Mixture: Cook the mixture, stirring constantly, until it begins to thicken and bubble, approximately 10-15 minutes.

      Incorporate Egg Yolks: Once thickened, ladle about 1/2 cup of the hot mixture into the beaten egg yolks to temper them. Whisk well, then slowly whisk this mixture back into the saucepan. Cook for an additional 2-3 minutes until thickened further.

        Add Vanilla: Remove the saucepan from heat and stir in the vanilla extract. Let the pudding cool for a few minutes, stirring occasionally to prevent a skin from forming.

          Layer the Pudding: In a 2 to 3-quart dish, arrange a layer of vanilla wafers on the bottom. Top with a layer of sliced bananas followed by a generous portion of the pudding. Repeat the process until all ingredients are used, ending with a layer of pudding on top.
