4 boneless, skinless chicken thighs

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

2 cups chicken broth

8 oz egg noodles

1 tablespoon unsalted butter

1 cup broccoli florets (fresh or frozen)

1/2 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

Lemon wedges, for serving

Instructions
 

Prepare the Chicken: Season the chicken thighs with garlic powder, paprika, salt, and pepper.

    Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken thighs and sear for 5-6 minutes per side until golden brown. Remove the chicken from the skillet and set aside.

      Cook the Noodles: In the same skillet, pour in the chicken broth and bring it to a simmer. Add the egg noodles and cook according to package instructions, usually about 6-8 minutes, stirring occasionally.

        Add Broccoli: When the noodles are almost cooked, add the broccoli florets to the skillet. Stir to combine and cook for an additional 3-4 minutes until the broccoli is tender.

          Combine: Once the noodles and broccoli are cooked, return the chicken to the skillet. Reduce the heat to low and stir in the butter and Parmesan cheese until melted and creamy. Adjust seasoning with salt and pepper as needed.

            Serve: Garnish with fresh parsley and serve with lemon wedges on the side for added brightness.
