One-Pan Creamy Parmesan Chicken and Rice (40 Minutes)

1 lb (450g) boneless, skinless chicken thighs

1 cup uncooked long-grain rice (such as Basmati or Jasmine)

3 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 medium onion, finely chopped

4 cloves garlic, minced

1 cup frozen peas (optional)

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken thighs on both sides with salt, pepper, and Italian seasoning.

    Sear the Chicken: In a large skillet or deep pan, heat the olive oil over medium-high heat. Add the seasoned chicken thighs and sear for about 4-5 minutes on each side until they are golden brown and cooked through. Remove the chicken from the pan and set aside.

      Sauté Aromatics: In the same pan, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent and fragrant.

        Add Rice and Broth: Stir in the uncooked rice, followed by the chicken broth. Bring the mixture to a simmer, then reduce the heat to low.

          Creamy Mixture: Stir in the heavy cream and half of the grated Parmesan cheese until well combined. Season with additional salt and pepper if needed.

            Combine Chicken and Cook: Nestle the seared chicken back into the rice mixture. Cover the pan with a lid and let it cook on low heat for about 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.

              Add Peas: If using, stir in the frozen peas during the last 5 minutes of cooking, allowing them to heat through.

                Final Touch: Once the rice is tender and creamy, remove the pan from heat. Sprinkle the remaining Parmesan cheese on top and let it melt for a minute.
