One-Pan Lemon Garlic Chicken and Rice

Ingredients
  

4 boneless, skinless chicken thighs

1 cup jasmine rice

2 cups low-sodium chicken broth

4 cloves garlic, minced

1 medium onion, diced

1 cup baby spinach

1 medium lemon (zest and juice)

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, paprika, salt, and pepper. Add the chicken thighs, coat them well, and let them marinate in the fridge for at least 30 minutes (or up to 2 hours for more flavor).

    Sauté the Aromatics: In a large skillet or a sauté pan over medium heat, add a splash of olive oil. Once hot, add the diced onion and sauté until translucent, about 3-5 minutes.

      Brown the Chicken: Push the onions to the side of the pan and increase the heat slightly. Add marinated chicken thighs and sear them for 5-7 minutes on each side until golden brown. Remove the chicken and set aside.

        Cook the Rice: In the same pan, add the jasmine rice and stir to coat it with the onion and oil. Toast the rice for 2-3 minutes before adding the chicken broth. Bring to a boil.

          Combine and Simmer: Once boiling, reduce the heat to low and return the chicken to the pan, placing them on top of the rice. Cover the pan with a lid and let it simmer for 18-20 minutes until the rice is cooked and has absorbed the broth.

            Add Spinach: In the last 5 minutes of cooking, add the baby spinach to the top of the rice. Cover again and let the spinach wilt down.

              Serve: Once everything is cooked, fluff the rice with a fork, serve the chicken over the rice, and garnish with fresh parsley.
