Ingredients
  

4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1 cup heavy cream

1 teaspoon Italian seasoning

½ cup grated Parmesan cheese

Fresh basil, for garnish

Instructions
 

Season the Chicken: Begin by seasoning both sides of the chicken breasts with salt and pepper.

    Sear the Chicken: In a large skillet over medium-high heat, add the olive oil. Once hot, add the chicken breasts and cook for 6-7 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Cook the Garlic and Tomatoes: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the cherry tomatoes and cook for 2-3 minutes until they start to soften.

        Add Spinach and Cream: Stir in the spinach and let it wilt down, about 1 minute. Pour in the heavy cream, and sprinkle the Italian seasoning. Stir to combine and bring to a gentle simmer.

          Add Cheese and Chicken: Mix in the grated Parmesan cheese until melted and smooth. Return the seared chicken breasts to the skillet, spooning some of the creamy sauce over them. Let everything simmer together for an additional 5 minutes.

            Garnish and Serve: Remove from heat and garnish with fresh basil before serving.
