1 lb (450g) ground beef

1 cup long-grain white rice, rinsed

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (14.5 oz) diced tomatoes, undrained

2 cups beef broth

1 cup frozen peas and carrots mix

1 teaspoon smoked paprika

1 teaspoon dried oregano

½ teaspoon black pepper

½ teaspoon salt (adjust to taste)

1 cup shredded cheddar cheese (optional for topping)

Fresh parsley, chopped for garnish

Instructions
 

Brown the Beef: In a large pot or Dutch oven, over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon (about 5-7 minutes). Drain excess fat if necessary.

    Sauté Vegetables: Add the diced onion, garlic, and bell pepper to the pot with the beef. Sauté for about 3-4 minutes, until the vegetables are soft and fragrant.

      Add Rice and Seasoning: Stir in the rinsed rice, diced tomatoes (with juices), beef broth, smoked paprika, oregano, black pepper, and salt. Mix well to combine all ingredients thoroughly.

        Cook the Casserole: Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a lid and let it simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid.

          Incorporate Vegetables: After the rice is done, gently stir in the frozen peas and carrots. Cover again and let it heat through for an additional 5 minutes. Adjust seasoning, if needed.

            Cheesy Topping (Optional): If desired, sprinkle shredded cheddar cheese on top of the casserole. Cover with the lid again and let the cheese melt for about 2-3 minutes.

              Serve and Garnish: Remove from heat, fluff the casserole gently with a fork. Garnish with freshly chopped parsley and serve hot.
