Ingredients

1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces

2 cups broccoli florets (fresh or frozen)

3 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and black pepper, to taste

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

8 oz (225g) fettuccine pasta

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the chicken pieces and season with salt, black pepper, and Italian seasoning. Cook for about 5-7 minutes until the chicken is golden brown and cooked through. Remove the chicken from the pot and set aside.

Cook the Broccoli: In the same pot, add the broccoli florets and cook for 2-3 minutes until bright green but still crunchy. Remove the broccoli and set it aside with the chicken.

Prepare the Sauce: In the same pot, reduce the heat to medium, and add the minced garlic. Sauté for about 30 seconds until fragrant. Pour in the chicken broth and bring it to a gentle simmer.

Combine Remaining Ingredients: Add the heavy cream and bring it back to a simmer. Slowly stir in the Parmesan cheese until melted and smooth, creating a creamy sauce.

Cook the Pasta: Add the fettuccine to the pot, ensuring it’s submerged in the sauce. Cook according to package instructions, usually about 8-10 minutes, stirring occasionally, until the pasta is al dente.

Finish the Dish: Once the pasta is cooked, return the cooked chicken and broccoli to the pot. Stir well to combine and heat everything through for another 2-3 minutes. Adjust seasoning with salt and pepper as needed.

Serve: Garnish your creamy chicken Alfredo with chopped parsley and an extra sprinkle of Parmesan cheese, if desired. Serve hot and enjoy your delicious one-pot meal!
