12 oz. fettuccine pasta

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red, yellow, or green), diced

1 pound smoked sausage (Andouille or Kielbasa), sliced

1 teaspoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon dried thyme

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (adjust to taste)

4 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

2 cups fresh spinach

Fresh parsley, chopped (for garnish)

Sauté Aromatics: In a large, deep skillet or pot over medium heat, add olive oil. Once hot, add the diced onion and sauté for about 2-3 minutes until translucent. Stir in the minced garlic and diced bell pepper, cooking for an additional 2 minutes until fragrant.

    Cook Sausage: Add the sliced smoked sausage to the pot and cook until browned, about 5 minutes, stirring occasionally. This will enhance the flavor of the dish.

      Season: Sprinkle in the Cajun seasoning, smoked paprika, dried thyme, black pepper, and cayenne pepper. Stir well to coat the sausage and veggies with the spices and let them cook for about 1 minute.

        Add Pasta: Pour in the chicken broth and bring to a gentle boil. Add the fettuccine pasta, ensuring it is submerged in the liquid. Reduce the heat to medium-low, cover the pot, and cook for 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.

          Create Creamy Sauce: Lower the heat further, and stir in the heavy cream and grated Parmesan cheese. Mix well until the cheese has melted and the sauce is creamy and smooth.

            Add Fresh Ingredients: Gently fold in the halved cherry tomatoes and fresh spinach. Allow the spinach to wilt, which should take about 2 minutes. Taste and season with salt if needed.

              Serve: Remove from heat and garnish with chopped fresh parsley. Serve the creamy Cajun pasta warm, enjoying the vibrant flavors and creamy texture!
