8 oz (225g) spaghetti or fettuccine

2 tbsp olive oil

4 cloves garlic, minced

1 cup (about 100g) cremini mushrooms, sliced

2 cups fresh spinach

4 cups vegetable broth

1 cup grated Parmesan cheese

1 tsp Italian seasoning

½ tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

    Add the sliced mushrooms to the pot and cook for 5-7 minutes, stirring occasionally, until they have softened and released their juices.

      Pour in the vegetable broth and bring the mixture to a boil. Once boiling, add the spaghetti (or fettuccine) and cook according to package instructions, stirring occasionally to prevent sticking.

        After the pasta has cooked for about 8-10 minutes, reduce the heat to low and mix in the fresh spinach, grated Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Stir until the spinach has wilted and the cheese has melted into a creamy sauce.

          Taste and season with salt and pepper as needed. If the sauce is too thick, you can add a splash of water or more vegetable broth to reach your desired consistency.

            Serve the pasta warm, garnished with freshly chopped parsley and lemon wedges on the side to squeeze atop the dish for added brightness.
