Ingredients

1 lb (450g) potato gnocchi

1 lb (450g) ground beef or lamb

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 can (15oz) diced tomatoes

2 cups chicken or beef broth

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional)

Salt and pepper, to taste

6 oz (170g) feta cheese, crumbled

2 cups fresh spinach

2 tbsp olive oil

Fresh basil leaves, for garnish

Instructions

Prepare the Ingredients: Start by gathering all your ingredients. Chop the onion and bell pepper, and mince the garlic.

Sauté the Meat: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the ground meat and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Season with salt and pepper.

Cook the Vegetables: Add the chopped onion, garlic, and red bell pepper to the pot. Sauté for another 5 minutes, until the onions are translucent and the bell peppers are softened.

Combine Ingredients: Stir in the dried oregano, dried basil, red pepper flakes, and the can of diced tomatoes (with juices). Mix well and let it simmer for about 2 minutes.

Add the Gnocchi: Pour in the chicken or beef broth and bring to a gentle boil. Add the gnocchi, stirring well to ensure they are submerged in the liquid.

Simmer: Reduce the heat to medium-low and cover the pot. Let it simmer for about 5-7 minutes, or until the gnocchi are soft and cooked through, stirring occasionally to prevent sticking.

Add Spinach and Feta: Once the gnocchi are cooked, stir in the spinach and crumbled feta. Cook for an additional 2-3 minutes, just until the spinach is wilted.

Serve: Remove from heat, garnish with fresh basil leaves, and enjoy your delicious one-pot meal!
