Ingredients
  

12 oz (340g) rotini or penne pasta

14 oz (400g) kielbasa sausage, sliced

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

2 cups (480ml) low-sodium chicken broth

1 can (14.5 oz) diced tomatoes, undrained

1 teaspoon dried Italian herbs (basil, oregano, thyme mix)

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

2 tablespoons olive oil

1 cup (100g) shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced kielbasa and cook until browned, about 5 minutes. Remove and set aside.

    In the same pot, add the diced onion and bell pepper. Sauté for 3-4 minutes until they are softened.

      Add the minced garlic and cook for an additional minute until fragrant.

        Stir in the uncooked pasta, chicken broth, diced tomatoes (with their juice), Italian herbs, red pepper flakes, salt, and pepper. Bring to a boil.

          Reduce heat to low and cover the pot. Simmer for about 10-12 minutes, stirring occasionally, until the pasta is cooked and has absorbed most of the liquid.

            Stir in the browned kielbasa and shredded cheddar cheese until melted and well combined. Adjust seasoning with more salt and pepper if desired.

              Remove from heat and let it sit for a few minutes. Garnish with fresh parsley before serving.
