1 cup orzo pasta

1 lb shrimp, peeled and deveined

4 tablespoons unsalted butter

1 tablespoon olive oil

4 cloves garlic, minced

1 medium onion, diced

1 cup vegetable broth

1 lemon (zested and juiced)

1 teaspoon dried oregano

Salt and pepper, to taste

2 cups baby spinach

½ cup grated Parmesan cheese

Fresh parsley, for garnish

Sauté Aromatics: In a large pot, melt 2 tablespoons of butter and the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

    Cook Shrimp: Add the shrimp to the pot, season with salt, pepper, and dried oregano. Sauté until the shrimp turn pink and opaque, about 3-4 minutes. Remove the shrimp from the pot and set aside.

      Prepare Orzo: In the same pot, add the orzo and toast for about 2 minutes, stirring frequently. Then, pour in the vegetable broth and bring the mixture to a boil.

        Add Lemon: Once boiling, reduce the heat to low, cover, and let it simmer for about 10 minutes, or until the orzo is tender and has absorbed most of the liquid.

          Combine Ingredients: Stir in the lemon zest, lemon juice, remaining butter, and baby spinach. Cook for an additional 2 minutes until the spinach wilts.

            Fold in Shrimp and Cheese: Return the cooked shrimp to the pot and add the grated Parmesan cheese. Gently fold everything together until well combined and creamy.
