12 oz (340g) smoked sausage, sliced into coins

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper, diced (any color)

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

8 oz (225g) penne pasta or rotini

4 cups low-sodium chicken broth

1 can (14.5 oz) diced tomatoes, undrained

2 cups fresh spinach, roughly chopped

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Sauté the Sausage: In a large pot or Dutch oven, heat olive oil over medium heat. Add the sliced smoked sausage and sauté for about 5 minutes until browned. Remove the sausage and set aside.

    Cook the Vegetables: In the same pot, add the diced onion and bell pepper. Cook for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add Seasonings: Sprinkle in the Italian seasoning and red pepper flakes (if using), stirring to combine.

        Combine Pasta and Liquids: Add the uncooked penne pasta, chicken broth, and diced tomatoes (with their juice) to the pot. Stir well to ensure the pasta is submerged.

          Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover with a lid and let it simmer for about 12-15 minutes, or until the pasta is cooked al dente. Stir occasionally to prevent sticking.

            Finish with Spinach and Cheese: Once the pasta is cooked, remove the lid and add the chopped spinach and cooked sausage back into the pot. Stir until the spinach wilts. Remove from heat and mix in the grated Parmesan cheese.

              Season and Serve: Taste and adjust seasoning with salt and pepper. Serve hot, garnished with fresh basil leaves if desired.
