12 oz elbow macaroni or penne pasta

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 tablespoon taco seasoning (homemade or store-bought)

1 can (15 oz) diced tomatoes, with juice

1 can (8 oz) tomato sauce

4 cups low-sodium chicken or beef broth

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 2-3 minutes.

    Brown the Meat: Add the ground beef or turkey to the pot, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 5-7 minutes. Drain any excess fat.

      Season the Mixture: Stir in the taco seasoning, mixing well to coat the meat evenly. Allow the spices to toast for a minute for enhanced flavor.

        Combine the Ingredients: Add the diced tomatoes (with their juice), tomato sauce, broth, elbow macaroni, black beans, and corn to the pot. Stir everything together until well combined.

          Cook the Pasta: Bring the mixture to a boil, then reduce the heat to medium-low. Cover the pot and simmer for about 12-15 minutes, or until the pasta is tender and has absorbed the flavors, stirring occasionally to prevent sticking.

            Cheesy Finish: Once the pasta is cooked, remove the pot from heat. Stir in the shredded cheddar cheese until melted and creamy. Taste and adjust the seasoning with salt and pepper as needed.
