1 lb (450g) ground beef or ground turkey

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), chopped

2 cups uncooked pasta (penne or fusilli work great)

1 packet taco seasoning (about 2 tablespoons)

1 can (15 oz) diced tomatoes, with juices

2 cups beef or chicken broth

1 cup corn (frozen or canned)

1 can (15 oz) black beans, drained and rinsed

1 cup shredded cheddar cheese

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Sauté the Beef: In a large pot over medium heat, add the olive oil. Once hot, add the ground beef (or turkey), diced onion, and chopped bell pepper. Cook until the meat is browned and the vegetables are soft, about 5-7 minutes. Drain excess fat if necessary.

    Add Garlic: Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Incorporate Seasonings: Add the taco seasoning to the pot, mixing well to coat the meat and vegetables evenly.

        Combine Ingredients: Pour in the diced tomatoes with their juices, followed by the broth, uncooked pasta, corn, and black beans. Give everything a good stir, ensuring the pasta is submerged in the liquid.
