Ingredients

1 lb Italian sausage (mild or spicy, your choice)

4 cups chicken broth

2 large russet potatoes, thinly sliced

1 large onion, diced

4 cloves garlic, minced

2 cups kale, chopped (stems removed)

1 cup heavy cream

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

2 tablespoons olive oil

Optional: Grated Parmesan cheese for garnish

Instructions

Sauté the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a spatula. Cook until browned and cooked through (about 5-7 minutes). Drain excess fat if necessary.

Add Aromatics: Add the diced onion to the pot, stirring for about 3-4 minutes until translucent. Stir in the minced garlic and red pepper flakes, cooking for an additional minute until fragrant.

Incorporate Potatoes: Pour in the chicken broth and add the sliced potatoes. Stir well, ensuring that the potatoes are submerged in the broth. Bring to a boil, then reduce to a simmer. Cover and let cook for about 15 minutes, or until the potatoes are tender.

Finish with Kale and Cream: Add the chopped kale and heavy cream to the pot, stirring until the kale is wilted (about 2-3 minutes). Season with salt and pepper to taste.

Serve: Ladle the soup into bowls, garnishing with grated Parmesan cheese if desired. Enjoy your warm and hearty Zuppa Toscana!
