Ingredients

1 lb (450g) Italian sausage (mild or spicy, based on preference)

1 (16 oz) package of gnocchi (store-bought or homemade)

2 cups fresh spinach, roughly chopped

3 cloves garlic, minced

1 medium onion, diced

1 cup cherry tomatoes, halved

1 cup vegetable or chicken broth

1/2 cup heavy cream

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes (optional, for heat)

Olive oil

Salt and pepper, to taste

Grated Parmesan cheese, for serving

Fresh basil leaves, for garnish (optional)

Instructions

Cook the Sausage: In a large skillet, heat a drizzle of olive oil over medium heat. Add the Italian sausage, breaking it up with a spatula. Cook until browned and fully cooked through, about 5-7 minutes. Transfer the cooked sausage to a plate and set aside.

Sauté Aromatics: In the same skillet, add the diced onion and cook for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

Add Gnocchi and Broth: Add the gnocchi to the skillet, followed by the cherry tomatoes, Italian seasoning, red pepper flakes (if using), and the broth. Bring to a simmer and cook for about 5-7 minutes, or until the gnocchi are cooked and tender, stirring occasionally.

Incorporate Cream and Spinach: Reduce the heat to low. Stir in the heavy cream and chopped spinach. Cook for another 2-3 minutes, allowing the spinach to wilt and the sauce to thicken. Return the cooked sausage to the skillet, mixing well. Season with salt and pepper to taste.

Serve: Once everything is well combined and heated through, remove from heat. Serve hot, garnished with freshly grated Parmesan cheese and basil leaves, if desired.
