1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup cornstarch

1/3 cup vegetable oil (for frying)

1/4 cup fresh orange juice

Zest of 1 orange

1/4 cup soy sauce

1/4 cup honey

1 tablespoon rice vinegar

2 garlic cloves, minced

1 teaspoon ginger, grated

1 teaspoon red pepper flakes (optional, for heat)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Chicken: In a bowl, toss the chicken pieces with cornstarch until well coated. This will create a crispy exterior when fried.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat. Make sure the oil is hot but not smoking.

      Fry the Chicken: Add the coated chicken pieces to the hot oil in a single layer. Cook for about 5-7 minutes until golden brown and crispy, turning occasionally. Work in batches if necessary to avoid overcrowding. Remove the chicken and place it on a paper towel-lined plate to drain excess oil.

        Make the Sauce: In a mixing bowl, whisk together the fresh orange juice, orange zest, soy sauce, honey, rice vinegar, minced garlic, grated ginger, and red pepper flakes (if using).

          Combine Chicken and Sauce: In the same skillet, lower the heat to medium and pour the sauce into the pan, stirring continuously until it starts to thicken (about 2-3 minutes).

            Add Chicken to Sauce: Return the fried chicken pieces to the skillet, tossing them in the orange sauce to coat evenly. Allow the chicken to simmer in the sauce for an additional 2-3 minutes.

              Garnish & Serve: Once the chicken is well-coated in the sauce, remove from heat. Garnish with chopped green onions and sesame seeds. Serve hot over steamed white rice or fried rice.
