Ingredients
  

1 cup graham cracker crumbs

2 tablespoons sugar

1/4 cup unsalted butter, melted

8 oz cream cheese, softened

1/2 cup granulated sugar

1 teaspoon vanilla extract

Zest of 1 orange

1/4 cup fresh orange juice

1 cup heavy whipping cream

2 tablespoons powdered sugar

Orange slices and/or zest for garnish

Instructions
 

Preheat your oven to 325°F (160°C) and line a muffin tin with paper liners.

    In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly moistened.

      Press about 1 tablespoon of the mixture into the bottom of each muffin liner to form a crust. Bake in the preheated oven for 5-7 minutes until set. Let them cool while preparing the filling.

        In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.

          Add the vanilla extract, orange zest, and fresh orange juice to the cream cheese mixture, and mix until fully combined.

            In a separate bowl, whip the heavy cream with powdered sugar until stiff peaks form.

              Gently fold the whipped cream into the cream cheese mixture until combined. Be careful not to deflate the whipped cream.

                Spoon or pipe the cheesecake filling evenly into each of the cooled mini crusts.

                  Refrigerate the cheesecakes for at least 3-4 hours, or until set.

                    Once set, garnish each mini cheesecake with a slice of orange and additional orange zest, if desired.
