Ingredients

2 packs of Oreo cookies (about 36 cookies)

1 (8 oz) package of cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

2 cups heavy whipping cream

1 tablespoon unsweetened cocoa powder (for garnish)

Chocolate shavings or mini Oreo cookies (for decoration, optional)

Instructions

Prepare the Cream Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, continuing to beat until well combined. Stir in the vanilla extract.

Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined. Be careful not to deflate the whipped cream.

Layering the Cake: Begin assembling your icebox cake by dipping each Oreo cookie quickly into milk to soften slightly (about 1-2 seconds). Arrange a single layer of dipped Oreo cookies in the bottom of a 9x13 inch baking dish.

Add the Cream Layer: Spoon half of the cream mixture over the layer of cookies. Spread it evenly with a spatula.

Repeat the Layers: Add another layer of dipped Oreo cookies on top of the cream. Pour the remaining cream mixture over this layer, spreading it evenly.

Final Layer: Top with one last layer of dipped Oreo cookies, pressing them gently into the cream layer. Cover with plastic wrap and refrigerate the cake for at least 4 hours, preferably overnight, to allow the cookies to soften and the flavors to meld.

Serve: Once chilled and set, remove the cake from the refrigerator. Dust the top with cocoa powder for garnish and decorate with chocolate shavings or mini Oreo cookies if desired. Cut into squares and serve chilled.
