4 medium russet potatoes, washed and cut into wedges

1 large onion, sliced into rings

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon sea salt

½ teaspoon black pepper

2 tablespoons fresh parsley, chopped (for garnish)

Optional: Grated Parmesan cheese for topping

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easier cleanup.

    Prepare Vegetables: In a large bowl, combine the potato wedges and sliced onions.

      Seasoning Mix: In a small bowl, whisk together the olive oil, garlic powder, smoked paprika, dried thyme, sea salt, and black pepper until well combined.

        Coat the Potatoes and Onions: Pour the seasoning mixture over the potatoes and onions. Toss everything together until the potatoes and onions are evenly coated with the oil and seasoning.

          Arrange on Baking Sheet: Spread the potato and onion mixture in a single layer on the prepared baking sheet. Ensure there’s space between the wedges for even crisping.

            Bake: Place the baking sheet in the preheated oven and bake for about 30-35 minutes, flipping the potatoes and onions halfway through, until they are golden and crispy on the outside.

              Optional Topping: If desired, sprinkle grated Parmesan cheese over the vegetables during the last 5 minutes of baking for an extra layer of flavor.
