Ingredients
  

1 pound Brussels sprouts, trimmed and halved

3 tablespoons olive oil

1 teaspoon sea salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika (optional)

2 tablespoons balsamic vinegar

1 tablespoon honey (or maple syrup for a vegan option)

1/4 cup grated Parmesan cheese (optional for a richer flavor)

Fresh parsley, chopped for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

    Prepare the Brussels Sprouts: Rinse the Brussels sprouts under cold water, trim the ends, and cut them in half lengthwise.

      Season: In a large mixing bowl, toss the halved Brussels sprouts with olive oil, sea salt, black pepper, and smoked paprika, ensuring they are evenly coated.

        Roasting: Spread the seasoned Brussels sprouts out in a single layer on a baking sheet lined with parchment paper to prevent sticking.

          Roast: Place the baking sheet in the preheated oven and roast for about 20-25 minutes, or until the Brussels sprouts are golden brown and crispy on the outside, stirring halfway through for even roasting.

            Add Balsamic & Honey: Remove the Brussels sprouts from the oven and drizzle them with balsamic vinegar and honey. Toss to coat the sprouts evenly and return them to the oven for an additional 5 minutes.

              Finish with Cheese: If using, sprinkle the grated Parmesan cheese over the hot Brussels sprouts and return to the oven for about 2 more minutes, just until the cheese is melted.

                Garnish & Serve: Remove from the oven and garnish with fresh chopped parsley if desired. Serve warm.
